In total, 122 differentially abundant metabolites were identified in the BT group, HT and CT sweet cherry samples, and 21 metabolites showed significant differences in each pair of comparisons. There were 49 upregulated metabolites, 54 downregulated metabolites and 408 unchanged metabolites in the high temperature treatment group. The CT group showed 53 upregulated, 24 downregulated and 434 unchanged metabolites.The differentially abundant metabolites mainly included flavonoids, phenolic acids, amino acids and derivatives thereof, lipids, alkaloids, nucleotides and derivatives thereof, organic acids, lignans and coumarin, etc. In the comparison of the BT and HT groups, 10 kinds of anthocyanin monomers were obtained, and the HT group showed significant upregulation of the contents of most anthocyanins. In the comparison of the HT and CT groups, 8 kinds of anthocyanin monomers were obtained, and the content of anthocyanins in the HT group was significantly downregulated.
