After pulling the code from https://github.com/hugoladret/variance-processing-V1 , the zip files should be unzipped in ./preprocessing/cat/ . Detailed instructions can be found in the github's main README.md file.

Source data (i.e. "the numerical data enough to generate the graphs and plots - not the raw data") is contained in source_data_postprocess.zip, which should be unzipped in ./postprocessing/data/ from the aforementioned github repository. Again, further instructions can be found in the github's main README.md file.
