Flavor categories of ripe fresh figs (landrace Ficus carica)

Presented here is a summary of work in progress towards a “flavor science for figs”. A listing of flavors determined by the author and many other investigators is provided for uncaprified and caprified landrace figs, with a focus on cultivars sold to home orchardists. Afterwords, a schema for determination of flavor chemical coordinates is discussed. All tables are contained within this brief report.
